High-moisture extrusion is a process in which alternative proteins are processed under high pressure, high temperature, and high moisture content to form a fibrous, meat-like structure.

Pulsed Electric Fields (PEF)
PEF treats food with short, high-voltage electrical pulses and opens cell structures without causing thermal damage.
