Structure for Alternative Proteins

High-Moisture Extrusion (HME) is a process for producing textured plant-based proteins with a fibrous, meat-like structure. In this process, alternative protein sources are extruded under high pressure and with a controlled water content. Targeted cooling and shaping after the extruder result in products that are used as meat and fish alternatives or in hybrid formulations.
