
At this year’s Meat Industry Forum, numerous industry representatives once again gathered for two eventful days. The first day took us to Danish Crown Fleisch GmbH, where a tour was scheduled for the afternoon, and the day concluded with a joint industry evening event. In addition to current challenges related to hygiene and food safety, new product concepts are also becoming increasingly important for the industry. These include alternative proteins as well as hybrid products that combine animal and plant-based ingredients. For the development of such products, high-moisture extrusion offers a wide range of possibilities for producing textured protein products with an appealing texture.
